Squash Stuffing Casserole

- 2 cups cooked yellow squash
- 1 can cream of chicken soup
- 1 cup grated carrots
- salt and pepper
- 1/2 stick butter
- 2 tablespoon dried minced onion
- 1 cup sour cream
- 1 - 8oz bag cornbread stuffing
DIRECTIONS
- Mash squash and stir in onion, soup, sour cream and carrots.
- Salt and pepper to taste.
- Sprinkle a layer of stuffing mix in a buttered 2 quart casserole.
- Add squash mixture and cover with remaining stuffing mix.
- Dot with butter.
- Bake in a preheated 350 degree oven for 30 minutes.
- **This freezes well.
