Squash Stuffing Casserole

  • 2 cups cooked yellow squash
  • 1 can cream of chicken soup
  • 1 cup grated carrots
  • salt and pepper
  • 1/2 stick butter
  • 2 tablespoon dried minced onion
  • 1 cup sour cream
  • 1 - 8oz bag cornbread stuffing
DIRECTIONS
  1. Mash squash and stir in onion, soup, sour cream and carrots.
  2. Salt and pepper to taste.
  3. Sprinkle a layer of stuffing mix in a buttered 2 quart casserole.
  4. Add squash mixture and cover with remaining stuffing mix.
  5. Dot with butter.
  6. Bake in a preheated 350 degree oven for 30 minutes.
  7. **This freezes well.
