  • 2 lb of high quality filet of beef (ground or diced)
  • 2 egg yolks
  • 1 onion chopped fine
  • 4 tbsp parsley chopped fine
  • 4 tbsp capers chopped fine
  • 4 tbsp green onions chopped fine
  • 1 tbsp Worcestershire
  • 1 tbsp ketchup
  • Dash of garlic powder
  • Dash of paprika
  • Dash of cayenne
  • Juice of 1 lemon
  • Dash of cognac, brandy or sherry
  • Coarse sea salt (to taste)
  • Fresh ground pepper (to taste)
  • Toast or crackers
DIRECTIONS
  1. In a large bowl, mix all ingredients gently but thoroughly.
  2. Add more seasoning and alcohol to taste.
  3. Serve immediately in a well chilled bowl on toast or crackers.
