Steve's Bean Soup - Updated

  • 1 lb navy beans
  • 4 cups chicken broth
  • 1 package smoked pork hocks or a ham bone
  • 1 onion
  • 1 lb carrots
  • 3-4 potatoes
  • 1 lb cubed ham
  • 1 tsp chili powder
  • salt & pepper
DIRECTIONS
  1. Soak beans in water overnight. Next day discard the water.
  2. Combine 4 cups chicken broth, 6 cups water, ham hocks (or ham bone), onion, beans
  3. Simmer for 1 1/2 to 2 hours
  4. Add carrots, potatoes, ham cubes and seasonings. Continue simmering for another hour ( or longer ) and remove ham hocks.
RECIPE BACKSTORY
This makes a good amount of soup and freezes well. Also, letting it sit in the refrigerator overnight enhances the flavor.
