Steve's good heart pancakes

  • 2 eggs, beaten
  • 3/4 c flour
  • 1 1/2 c buttermilk
  • 1 1/2 t baking powder
  • 1/2 t baking soda
  • 3/4 c oats
  • 1 c crushed Kashi heart to heart cereal
  • 1/4 t salt
  • 1/4 t cinnamon
  • 1/4 c sugar
  • country crock spread for cooking
  1. Mix all dry ingredients together, blending thoroughly
  2. Add wet ingredients and stir together enough to blend, using silicone spatula to scrape down edges
  3. Allow mixture to set for about 30 minutes
  4. Put a small amount of country crock on frying pan over medium low and pour out batter in about 6" rounds
  5. Let pancakes cook until bubbles come up in center of cake and they are golden brown and edges are crispy
  6. Turn pancakes and cook until golden brown and centers bounce back
  7. Serve hot
My husband loves pancakes, so I am always trying to come up with ways to make them healthy for him but that he will still enjoy - it's a constant challenge, but this was one that he did like.
