Stevie's Hearty Chicken & Vegetable soup

  • Servings: Serves about 4 people

  • 2x chicken Breasts or 4 chicken drumsticks
  • 1x Onion
  • Brocolli (3 reasonable size florets)
  • Cauliflour (3 Florets)
  • Savoy cabbacge ( 4 chopped leaves)
  • 3 Potatoes (Maris Piper)
  • 2 Carrots
  • 2 pints of Chicken Stock or 2 stock cubes
  • 3 Basil leaves
  • generous amount of fresh parsely.
  • Garlic 2 small cloves or 1 large
  • 2 generous knobs of butter
  • 1 tablespoon of sugar
  • 2 pints of Water (if using stock cubes)
  • Salt and pepper
  1. Finely chop Garlic and onion then place in a pan of boiling hot water(2pints)or chicken stock.
  2. Chop all vegetables up into small chunks and add to pan along with Basil leaves and parsely.Leave to simmer for about
  3. Roast chicken in oven for about 25 - 20 mins on gas mark 6 (approx 175 degrees) until golden brown.
  4. Finely chop chicken and add to vegetables,also pour in juices(leave out for healthier soup) from chicken.Leave to simmer for about 15 minutes on a low hob.Add tblespoon of sugar and season with salt and pepper.
  5. Pour from pan into a blender or blitzer,and add a knob or 2 of butter. Blits or blend for about 20 seconds until thick and creamy..should be a light golden brown,thick creamy consistancy.
  6. Serve with nice warm crusty bread

I discovered this recipe from just trial and error really, trying different ingredients and looking for a hearty winter warming soup.
