Stir-Fried Shrimp and Asparagus
INGREDIENTS
  • 1 tbsp. sesame seeds
  • 2 tbsp. oil
  • 1 tsp. sesame oil, optional
  • 1 medium onion, sliced lengthwise
  • 1 minced clove garlic
  • 1/2 tsp. minced gingerrroot
  • 1/2 lb. asparagus, cut into 1 1/2 inch diagonal pieces
  • 1/4 cup chicken broth or water
  • 1/2 lb. large shrimp, shelled and deveined
  • 1 tbsp. soy sauce
DIRECTIONS
  1. Heat wok or large skillet over medium high heat.
  2. Add sesame seeds and stir just until golden, remove and set aside.
  3. Return pan to heat and add vegetable oil and sesame oil, if using.
  4. Add onion and stir-fry for 1 minute.
  5. Add garlic, ginger and asparagus; stir-fry for 1 minute.
  6. Add stock; cover pan and cook stirring occasionally until asparagus is almost tender-crisp, about 2 minutes.
  7. Add shrimp and cook stirring just until shrimp is pink and curled, about 2 minutes.
  8. Add soy sauce and toss.
  9. Sprinkle on sesame seeds.
  10. Serve immediately.

RECIPE BACKSTORY
These go so good together and are very quick and easy to make. Just cook up some linguini or fettucini and toss with a bit of olive oil and the cooked shrimp meal for a very nice meal.
