Stir Fry Pizza
INGREDIENTS
  • Cooking Time: 8 to 14
  • 1 Boboli pizza or 1/2 Yeast Crust Recipe
  • 3 skinless, boneless chicken thighs, cut into 1/2" pieces
  • 1/3 cup plum jelly
  • 1/4 cup chili sauce
  • 1 tsp. lemon juice
  • 1 cup sliced mushrooms
  • 1 onion, chopped
  • 1-1/2 cups shredded Monterey Jack cheese
  • 1-1/2 cups shredded mozzarella cheese
DIRECTIONS
  1. Make and prebake crust, if using.
  2. Preheat oven to 400 degrees.
  3. In small saucepan, combine plum jelly, chili sauce, and lemon juice.
  4. Bring to a boil, then reduce heat and simmer 5 minutes until thickened, stirring frequently.
  5. Spread on Boboli crust or partially baked crust.
  6. In large skillet, saute chicken in oil for 3 minutes (if using shrimp, saute with vegetables). Add mushrooms and onion and cook for 3-5 minutes longer.
  7. Drain mixture and sprinkle over sauce on the pizza crust.
  8. Top with shredded cheeses and bake at 400 degrees for 8-14 minutes until crust is golden brown and cheese is melted.
