Stir fried chicken & rice

- chicken breast stir fry strips 500g
- green shallots, 4, thinly sliced
- ready-cooked microwave basmati rice 1 x 250g packet
- Thai-style frozen vegetables 350g
- soy sauce 2 tbs
- sweet chilli sauce 2 tbs
- lemon juice 2 tbs
- lemon 1, cut into wedges
DIRECTIONS
- 1. Spray a large non-stick frying pan or wok with oil. Heat over medium heat. Add the chicken strips and shallots. STir fry 5 mins or until golden and cooked through.
- 2. While the chicken is cooking, microwave the rice and frozen Thai-style vegetables following packet instructions. Add to the pan and stir to combine.
- 3. Combine the soy sauce, sweet chilli sauce and lemon juice and stir into the pan. SErve immediately with lemon wedges.
