Strawberry Blueberry Crunch Pie
INGREDIENTS
  • Servings: 1 Pie
  • 1 unbaked pie shells homemade or premade
  • FILLING:
  • About 2 1/2 C blueberries
  • About 2 1/2 C strawberries
  • 2/3rds - 1 C white sugar
  • 1/3 light brown sugar
  • 1 heaping TBS butter melted
  • 1 tsp vanilla
  • Small pinch salt
  • 2 Heaping TBS cornstarch
  • 2 Heaping TBS AP Flour
  • TOPPING:
  • 3/4 C Old Fashioned oats
  • 3/4 C Flour
  • 1/2 - 3/4 C Light brown sugar
  • pinch of salt
  • 1/2 C refrigerated but soft butter (not melted!)
DIRECTIONS
  1. Put berries together in a big bowl and add the sugars stir and put in fridge for about 20mins
  2. Melt butter cool slightly and add vanilla and salt
  3. Pull bowl outta fridge and pour butter mix over berries and mix up thourly
  4. Add cornstarch and flour and mix it in.
  5. Pour into unbaked pie shell
  6. TOPPING:
  7. Mix all ingredients except butter in bowl
  8. Cut in butter you want it crumbly not mushy and sticking together or sticky
  9. To bake the pie:
  10. Preheat oven to 425 F and put tin foil around edges of pie crust so it won't burn
  11. Put pie in oven and bake for 15 mins take outta oven and reduce heat to 350-375 F
  12. Sprinkle topping evenly over pie continue to bake untill done (I tell people when filling that seeps through topping bubbles thick like yellowstone's mud pots (search youtube for yellowstones mud pots if you've never seen them) and topping is browned its probably done )
