Strawberry Cupcakes
  • 1/2 cup softened butter
  • 3/4 cup sugar
  • 2 eggs
  • 2 tsp Vanilla extract
  • 1 1/2 cup self raising flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2/3 cup milk
  1. Cream butter and sugar then add the eggs one at a time, beating well after each. stir in Vanilla extract. sift the dry ingredients and add to other mixture a third at a time, alternating with the milk. pour into papers or foils on baking tray, or cupcake tray. Bake in 180c oven for 18-24 minutes. Makes 12
