Strawberry Jam Cake
INGREDIENTS
- 1 cup butter
- 2 cups sugar
- 6 eggs
- 3 cups all purp flour
- 2 tsp soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 tsp cloves (ground)
- 1/2 tsp allspice
- 1 cup buttermilk
- 1 1/2 cup strawberry jam.
DIRECTIONS
- Cream butter and sugar. Add eggs, one at a time, beating well after each addition. Combine dry ingredients and add to creamed mixture alternately with buttermilk. Stir in jam.
- Spoon batter into 3 oiled and floured cake pans. Bake 1t 350 degrees for 20 to 25 minutes. Cool and put together with filling
- Filling: 1 1/2 cup butter
- 1 1/4 c. flour
- 3 cups suigar
- 3/4 c. water
- 1 1/2 tsp vanilla
- Cream butter and flour. Boil sugar and water 2-3 minutes. Pour over flour mixture. Add vanilla and beat until cool. If this is too runny at this stage you can add confectioner's sugar until it is ok. Put on cake.
