Strawberry Jam Cake

  • 1 cup butter
  • 2 cups sugar
  • 6 eggs
  • 3 cups all purp flour
  • 2 tsp soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/2 tsp cloves (ground)
  • 1/2 tsp allspice
  • 1 cup buttermilk
  • 1 1/2 cup strawberry jam.
DIRECTIONS
  1. Cream butter and sugar. Add eggs, one at a time, beating well after each addition. Combine dry ingredients and add to creamed mixture alternately with buttermilk. Stir in jam.
  2. Spoon batter into 3 oiled and floured cake pans. Bake 1t 350 degrees for 20 to 25 minutes. Cool and put together with filling
  3. Filling: 1 1/2 cup butter
  4. 1 1/4 c. flour
  5. 3 cups suigar
  6. 3/4 c. water
  7. 1 1/2 tsp vanilla
  8. Cream butter and flour. Boil sugar and water 2-3 minutes. Pour over flour mixture. Add vanilla and beat until cool. If this is too runny at this stage you can add confectioner's sugar until it is ok. Put on cake.
