Strawberry Muffins

  • 1 Cup sugar
  • 2 Cups all-purpose flour
  • 2 Teaspoons baking soda
  • 1/2 Teaspoon plus 1 pinch salt
  • 2 large eggs
  • 1 Cup buttermilk, room temperature
  • 1 Stick unsalted margarine, melted
  • 1 Cup coarsely chopped frozen strawberries
  1. Preheat oven to 400 degrees. F. Thaw strawberries and dice into 1/4 inches pieces. Coat muffin tin with nonstick spray and set aside. Combine all dry ingredients and mix well. Add diced strawberries and mix again. Whisk buttermilk, eggs and margarine and add to dry ingredients. Mix for 3 minutes. Divide batter between muffin Cups and bake 17-19 minutes.
