Strawberry Shortcake

  • 2/3 cup sugar
  • 1/4 cup shortening
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 tsp sat
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 cup milk
  • Whipped cream
  • 1 1/2 quarts fresh or frozen strawberries, sliced and sweetened to taste
DIRECTIONS
  1. Preheat oven to 350 degrees.
  2. Grease a 9" square baking pan.
  3. In a bowl, cream sugar and shortening.
  4. Add egg and vanilla; beat well.
  5. Combine dry ingredients and add alternately with milk to the creamed mixture.
  6. Spread batter in the prepared pan.
  7. Bake for 20 - 25 minutes. Cool on wire rack.
  8. Cut into nine servings. Split each piece horizontally and fill with whipped cream and strawberries. Replace top of cake and top with more berries and whipped cream.

This shortcake is made in a 9" square pan. The cake is flavorful and has a nice density to stand up to berries and sauce.
