Strawberry Spinach Salad

INGREDIENTS
- Dressing:
- 1 cup white balsamic vinegar
- 1 ½ cups olive oil
- 3 cloves garlic
- Juice of one lemon
- 1 Tbls. Dijon mustard
- Candied Walnuts:
- 1 bag walnut halves
- 3 Tbls. butter
- 3 Tbls. sugar
- 2 Tsp. cayenne pepper
- Salad:
- 1 bag baby spinach
- 1 head green leaf lettuce
- 1 pint strawberries, sliced
- 1 large cucumber, sliced
- 1 pint grape tomatoes
- 1 cup gorgonzola cheese, crumbled (reserve half)
DIRECTIONS
- Dressing:
- Combine garlic, vinegar, juice, mustard, and salt and pepper to taste in a blender or food processor. Blend
- on low speed, adding oil slowly in a very thin stream. Continue until all oil is combined and dressing is creamy.
- Candied Walnuts:
- Blanch nuts in melted butter over medium heat. Toss warm nuts in a plastic bag with sugar and cayenne
- pepper until well coated.
- Salad:
- Combine all ingredients in a large bowl, toss with dressing.
- Plate and sprinkle with reserved gorgonzola. Top with candied walnuts.
