Strawberry Tart W/ Vanilla Bean Pastry Cream

  • For Pastry Cream
  • 2 cups of whole milk
  • 6 large egg yolks
  • ½ cup cornstarch
  • 1/8 tsp salt
  • Seeds from one vanilla bean or 1 tsp vanilla extract
  • For Basic Tart Dough
  • 1 egg yolk
  • 2 tbsp cold water
  • 1 tsp vanilla extract
  • 1 ¼ cups flour
  • 1/3 cup sugar
  • ¼ tsp salt
  • ½ cold unsalted butter (cut in cubes)
  • For Strawberry Topping
  • Strawberries (hulled and cut in half)
  • ¼ cup strawberry jam
DIRECTIONS
  1. Melt jam in sauce pan and use pastry brush to apply small amount to already assembled fruit.
  2. For Tart Assembly
  3. After tart shell and custard has chilled completely, start assembling by place strawberries in a circular design working outward in. Then apply jam with pastry brush for a glaze and to keep strawberries moist. Enjoy!
