Stuffed Avocado Boats

  • 1 medium sized avocado.
  • Finely chopped corainder.
  • Chopped onions and tomatoes.
  • Boiled chick peas.
  • Boiled black grams (Black Chana).
  • Grated beet-root.
  • Cooked Quinoa.
  • 1 Lemon.
  • Spices of choice.
  • Sauce of choice.
DIRECTIONS
  1. Step1
  2. Cut the avocado into halves. Scrap the avocado to make more space for stuffing. Once both the avocados are peeled, we will begin the stuffing.

  4. In a bowl, add chopped onions and tomatoes. Add boiled black chana to it. Top it with coriander and mix well. Add few spices and salt to taste. Mix this well. We are now ready with the first stuffing. Stuff the first avocado boat with this stuffing.

  6. Now lets begin with second stuffing. In a bowl add cookede quinoa, boiled chick peas. Add grated beetroot to it. Some coriander. Mix the mixture well. Add 2-3 lemon drops and little lemon zest. Mix it well. Stuff the second avocado boat with this stuffing.

  8. Now lets dress both the stuffed avocado boats with sauce. Here we will us creamy ceasar and tomato ketchup. You can usee any sauce of your choice or even virgin olive oil will best suite this
