Stuffed Dates with Almonds
INGREDIENTS

  • Preparation Time: 10 minutes
  • 1 (8 oz.) container whipped cream cheese
  • 2 Tbs. powdered sugar
  • 2 tsp. fresh lemon juice
  • 1 (8 oz.) pkg. pitted dried plain dates
  • 1/4 cup (approx.) sliced or whole almonds
DIRECTIONS
  1. In a small mixing bowl, use a hand whisk to combine cream cheese, sugar and lemon juice.
  2. Spoon mixture into a small freezer bag, press out excess air and seal.
  3. Use a sharp knife to widen the slit in each date. Avoid cutting all the way through.
  4. Use a scissors to cut a small corner off the freezer bag, then pipe in about a teaspoonful of the cream cheese mixture into each.
  5. Top each date with almonds. You can simply press in an almond (photo center), or use your imagination to create a peacock (photo left) or a butterfly (photo right).
RECIPE BACKSTORY
The almonds and dates are just two of the foods traditional eaten during the Jewish holiday of the Festival of the Trees. I love it because not only do I serve it along with other items to adults during the holiday, it's easy enough to serve year-round to kids as an after-school snack.
