Stuffed Meat Loaf
  • 1/2 cup Onion, Cooked
  • 1/2 cup Red Bell Pepper, Finely Chopped
  • 1 tsp Adobo Seasoning (or Garlic Salt)
  • 2 Eggs
  • 3/4 cup Bread Crumbs
  • 1 1/2 lb Ground Beef
  • 3/4 tsp Black Pepper
  • 1 package Frozen Spinach, Thawed & Drained
  • 1 cup Shredded Mozzarella Cheese
  • 4 oz Thin Slices Salami (about 20 Pieces)
  1. *Combine all but spinach, cheese, and salami; Mix well and press out into 17x8 rectangle on wax paper
  2. *Layer spinach, cheese, and salami; roll up meatloaf jelly roll style into 8-inch log
  3. *Place foil in your crockpot - enough out of the edges so you will be able to lift out the meatloaf when it is done
  4. *Spray foil with non-stick cooking spray; place meatloaf in crockpot
  5. *Cook on high 3 hours or on low for 10-12 hours
  6. *Remove and let cool 10 minutes before slicing
