Stuffed Mushrooms with Shallots

INGREDIENTS
  • 12 mushrooms
  • 4 Shallots, chopped
  • 3 tablespoons butter
  • 2 tablespoons parsley, chopped
  • salt & pepper to taste
DIRECTIONS
  1. Wipe mushrooms with a damp cloth. Remove stems and chop. (Set mushrooms caps aside to stuff).
  2. Melt butter in pan, add shallots, parsley, and chopped mushroom stems. Saute for 2 minutes, stirring constantly.
  3. Arrange mushrooms in shallow, oiled, baking dish.
  4. Fill each cap with shallot mixture. Bake uncovered in 350F oven for 25 minutes.
