Stuffed Mushrooms with Shallots

INGREDIENTS
- 12 mushrooms
- 4 Shallots, chopped
- 3 tablespoons butter
- 2 tablespoons parsley, chopped
- salt & pepper to taste
DIRECTIONS
- Wipe mushrooms with a damp cloth. Remove stems and chop. (Set mushrooms caps aside to stuff).
- Melt butter in pan, add shallots, parsley, and chopped mushroom stems. Saute for 2 minutes, stirring constantly.
- Arrange mushrooms in shallow, oiled, baking dish.
- Fill each cap with shallot mixture. Bake uncovered in 350F oven for 25 minutes.
