Stuffed New Potatoes
INGREDIENTS
- 10 bite sized new potatoes
- 1 tablespoon fresh chives, chopped1/4 cup cheddar cheese
- 2 tbsp butter
- 1 tbsp sour cream
- 2 tbsp real bacon bits
- pinch of salt and pepper
DIRECTIONS
- Boil potatoes, covered with water for 20 minutes.
- Remove potatoes and let cool.
- Cut 6 of the potatoes in half, then cut a sliver off of the bottom of each so that they lay flat, halved side up.
- Using a melon baller, scoop flesh from potato halves into a mixing bowl, making little potato cups with sides about ΒΌ inch thick.
- Mash potatoes well with a fork, add chives, butter, sour cream, bacon, salt and pepper.
- Mix well.
- Spoon heaping amount of filling into each of the potato cups.
- Place potatoes on baking sheet and bake at 400 degrees for about 15 minutes, or until golden. Sprinkle each serving with cheese.
- Serve warm
