Stuffed Peppers
INGREDIENTS
  • Servings: 4
  • 4 large bell peppers
  • 1 lb ground beef
  • 1/2 cup finely chopped onion
  • 1 15-oz can mexican corn
  • 1 15-oz can black beans
  • 1 cup shredded mexican cheese
  • 1 cup salsa
  • 1/3 cup chopped cilantro
DIRECTIONS
  1. Brown meat and onion.
  2. Drain. **
  3. Heat broiler and spray broiler-pan rack with nonstick cooking spray.
  4. Halve 4 large bell peppers lengthwise and core.
  5. Place cut side down on prepared rack and broil 7 minutes until lightly charred.
  6. Meanwhile in a bowl, mix drained corn, 1 rinsed 15-oz can black beans, 1 cup each cheese and salsa, and 1/3 cup chopped cilantro.
  7. Turn peppers over, fill with corn mixture and broil 2 minutes or until filling is hot.
