Sue's Pumpkin Bread

  • 1 ½ C sifted cake flour
  • 1 ½ tsp baking powder
  • 3/8 tsp baking soda
  • 3/8 tsp salt
  • 1 ½ tsp cinnamon
  • 3/8 tsp ginger
  • 3/8 tsp cloves
  • 2 eggs, lightly beaten
  • 1 ½ C canned pumpkin
  • ¾ C packed brown sugar
  • 3/8 C unsweetened applesauce
  • 1 ½ tsp vanilla
  • Almonds, walnuts or pecans, as desired
DIRECTIONS
  1. Preheat oven to 350 degrees. Lightly grease and flour a 9x5x3 inch loaf pan. In a large bowl combine flour, baking powder, soda, salt and spices. They can be sifted together. In another large bowl blend the eggs, pumpkin, brown sugar, applesauce, vanilla and nuts. Add the wet mixture to the dry mixture, stirring just until ingredients are moistened. Spoon batter into the loaf pan and smooth the top. Bake about 50-55 minutes or until a wooden pick inserted in center comes out clean. Cool on a wire rack about 15 minutes; remove from pan, and let cool completely on the wire rack. I eliminated the oil from the original recipe. It seems moist enough and has good flavor; the pumpkin and applesauce and 2 eggs seem to do the trick. If you feel you need the fat content, add about 4 tbsp vegetable oil to the wet ingredients.
