Sue's Honey-Nut Sandwich Cookies

  • 2 cups all-purpose flour
  • 1/8 teaspoon salt
  • 1 cup cold butter, cubed
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup walnuts
  • 1/4 cup sugar
  • 6 Tablespoons honey
  • 1 teaspoon butter, melted
  • 1/2 teaspoon ground cinnamon
DIRECTIONS
  1. Combine flour and salt in large. Cut in cold butter and cream cheese
  2. until mixture resembles coarse crumbs. Divide in half; shape into two balls, wrap in plastic wrap. Refrigerate for 2 hours or until easy to handle.
  3. Grind nuts with sugar in a food processor; until finely chopped, then transfer to a small bowl. Stir honey, butter and cinnamon.
  4. Grease to cookies sheets and pre-heat oven to 375 degrees.
  5. On a lightly floured surface, roll one portion of dough to 1/8-inch
  6. thickness. Cut with a floured 2-inch round cookie cutter. Place a
  7. teaspoonful of filling on the center of half of the circles; top
  8. with remaining circles, making a sandwich. Press edges with a fork to seal.
  9. Transfer to baking sheet.
  10. Bake 16-18 minutes or until golden
