Sue's Honey-Nut Sandwich Cookies

- 2 cups all-purpose flour
- 1/8 teaspoon salt
- 1 cup cold butter, cubed
- 1 package (8 ounces) cream cheese, softened
- 1 cup walnuts
- 1/4 cup sugar
- 6 Tablespoons honey
- 1 teaspoon butter, melted
- 1/2 teaspoon ground cinnamon
DIRECTIONS
- Combine flour and salt in large. Cut in cold butter and cream cheese
- until mixture resembles coarse crumbs. Divide in half; shape into two balls, wrap in plastic wrap. Refrigerate for 2 hours or until easy to handle.
- Grind nuts with sugar in a food processor; until finely chopped, then transfer to a small bowl. Stir honey, butter and cinnamon.
- Grease to cookies sheets and pre-heat oven to 375 degrees.
- On a lightly floured surface, roll one portion of dough to 1/8-inch
- thickness. Cut with a floured 2-inch round cookie cutter. Place a
- teaspoonful of filling on the center of half of the circles; top
- with remaining circles, making a sandwich. Press edges with a fork to seal.
- Transfer to baking sheet.
- Bake 16-18 minutes or until golden
