Sugar & Spice Cupcakes

  • 1/3 cup butter, melted
  • 1/2 cup buttermilk
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 cup flour
  • 2/3 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • pinch of grated nutmeg
  • pinch of ground cloves
  • Cinnamon Butter Icing
DIRECTIONS
  1. Preheat oven to 350 degrees.
  2. In a large bowl, whisk together butter, buttermilk, egg, and vanilla until smooth.
  3. Sift together flour, sugar, cinnamon, baking powder, baking soda, salt, nutmeg, and cloves. Whisk into buttermilk mixture until smooth.
  4. Divide batter evenly among 12 paper-lined muffin cups 2.5 or 3 inches in diameter. Bake 18 to 20 minutes, or until a cake tester inserted in a cupcake comes out clean. Let cool in pans 5 minutes, then remove to a wire rack right side up to cool completely. Spread tops of cupcakes with Cinnamon Butter Icing.
