Sugar-free banana, date and vanilla clafoutis

  • 1/2 cup cream
  • 2 eggs
  • 1/2 teaspoon vanilla bean paste
  • 1/4 cup almond meal
  • 4 fresh dates, pitted, chopped
  • 1 tbsp sultanas
  • 1 large, ripe bananas
DIRECTIONS
  1. Preheat oven to 180C or 160C fan-forced.
  2. Whisk cream, eggs and vanilla until smooth then stir in the almond meal.
  3. Divide dates, sultanas and banana between 2 x 1 1/4 cup ovenproof shallow dishes and then pour over cream mixture.
  4. Bake for 15-18 minutes or until golden and set. Serve warm or at room temperature.
