Sumi Salad
INGREDIENTS
- Servings: 8-10
- 2 T Oil
- 1/4 c sliced almonds
- 1/4c sesame seeds
- 8 green onions, finely sliced
- 1 head cabbage, finely chopped
- 2 3oz packages Raman noodles (You do not need the sauce packet)
- 4 chicken breasts
- Dressing
- 1/4 c sugar
- 1 teaspoon black pepper
- 1 t salt
- 1 cup oil
- 6 tablespoons rice vinegar
DIRECTIONS
- Combine sugar, pepper, salt, oil and rice vinegar. Mix well.
- Heat oil in skillet and toast almonds and seeds until lightly brown. Do not over cook.
- Cut chicken breast into small pieces and poach. Combine with onions, cabbage, noodles (crush noodles into small pieces) and dressing into large bowl and mix well.
- Refrigerate for several hours as flavors will mix better after sitting.
