Sun Dried Tomato cream cheese mousse

  • 1/2 c sun dried tomatoes
  • 2T pesto (I use the kind in the tube)
  • 2 8 oz blocks of cream cheese - softened
  • 6 slices provolone cheese
  1. mix 1 block cream cheese with sun dried tomatoes - I use my old hand stick blender for this (hint, hint :)
  2. Layer into loaf pan as follows -
  3. provolone cheese (3 slices)
  4. sun dried tomato cream cheese mix
  5. provolone cheese (3 slices)
  6. remaining block of cream cheese
  7. cover, and let set in fridge overnight
  8. when ready to serve, turn over and unmold
  9. Garnish with pesto over the top of the cheese
  10. Serve with your choice of crackers
believe it or not, this actually tastes like salmon mousse! :) It is great for pot lucks and get togethers, and looks like it was way harder to make than it actually is!
