Super Quick Cake
INGREDIENTS
  • 1 box Moist Cake Mix (Regular of Reduced Sugar)
  • 1 12 oz. can of Diet Soda
  • Fat Free Whipped Topping
  • Topping (Optional)
  • 1 pkg of sugar free, fat free pudding
  • 1/2 tub of Fat Free Whipped Topping
  • 1 C. of canned or fresh fruit (drained)
DIRECTIONS
  1. Preheat oven to 350. Mix the can of diet soda with the cake mix. Spray a 9 X 13 pan lightly with non-stick spray. Bake for 35 minutes. Serve with a couple of tablespoons of whipped topping or serve with the optional fruit topping.
  2. This cake is my family's favorite dessert. I got the recipe from a girlfriend at work. The original recipe used orange diet soda, and an orange cake mix but I have experimented with different mixes and sodas.

  5. Chocolate cake mix - Diet Pepsi or Coke
  6. Devils Food cake mix - Diet Dr. Pepper
  7. German Chocolate cake mix - Diet Pepsi or Coke
  8. Pineapple cake mix - Diet Lemon-lime soda (Sprite)
  9. Orange cake mix - Diet orange soda or lemon-lime soda(Sprite)
  10. My favorite topping combinations:
  11. Chocolate pudding - Peaches
  12. Cheesecake pudding - Pineapple
  13. Vanilla pudding - Mandarin oranges
  14. You can also benefit from my failures. Here are a few hints for a great cake every time.
  15. Be sure you use a 'Moist' cake mix. I really like the Pillsbury Moist Supreme Reduced Sugar cake mix. I have used the Duncan Hines Moist Deluxe, and several of the store brand mixes. They all seem to work fine.
  16. Don't use Fresca for your diet soda.
  17. Be sure your batter has a good consistency. You may need to add a little more soda if you are measuring from a 2 liter bottle.
  18. I don't put my topping on the cake until I am ready to serve.
  19. This cake is very moist. If you don't plan to eat it all in a couple of days, you may want to freeze part of it.
