Super Yummy Spinach Lasagne

  • 8 Oz. Lasange Noodles
  • 2 - 10 Oz. Packages Frozen Spinach
  • 2 Lbs. Cottage Cheese
  • 1 Pound Mozzarella or Monterey Jack Cheese, Grated
  • 2 Eggs
  • 1 Tbsp. Fresh Chopped Parsley
  • 1/2 Cup Butter (1 Stick) Softened
  • 2 Garlic Cloves, Chopped Finely
  • Salt & Pepper To Taste
DIRECTIONS
  1. Preheat oven to 350 degrees
  2. Cook pasta according to instructions in heavily salted water, drain when finished
  3. Cook spinach according to package instructions. Drain well to press out any excess moisture
  4. Mix cottage cheese, eggs, parsley, butter, garlic, salt, pepper, and 2 tbsp pasta water in a mixing bowl
  5. Grease a lasagne pan. Place a layer of noodles in the pan followed by layers of the cottage cheese mixture, mozzarella/jack cheese, spinach, then parmesan. Repeat layers
  6. Bake for 30 minutes. Let set for 10 minutes.
