Surprise Cookies
INGREDIENTS
- 3 generous tbs. shortening
- 1 egg
- 1/2 cup milk
- 3-1/2 cups flour
- 1 tsp. vanilla
- 1 cup sugar
- salt, to taste
- 1 tsp. baking soda
- 2 tsp. cream of tartar
- RAISIN FILLING
- 1 cup raisins, cut
- 1/2 cup water
- 1 tsp. vanilla
- 1/2 cup sugar
- 2 tsp. flour
- 1/2 tsp. butter
DIRECTIONS
- Mix like a cake.
- Roll rather thin.
- Moisten edges of half the cookies
- as you fill them with raisin filling.
- Bake in a quick oven (400 degrees)
- Filling:
- Combine ingredients and cook until thick.
- Cool while making cookie dough.
- Place 1 tsp. filling between two cookies.
- Moisten edges and press
- firmly with a fork.
