Surprise Meatballs
INGREDIENTS

  • 1/2 small red onion, diced fine
  • 3 cloves garlic, minced
  • 1 Tbsp. olive oil
  • 1/2 pound ground beef
  • 1 egg
  • 1 Tbsp. poultry seasoning
  • 1/4 cup roasted red pepper, in jar, diced fine
  • 4 Tbsp. parmesan cheese, grated
  • Salt & pepper to taste
DIRECTIONS
  1. Sauté onion and garlic in olive oil for 5 minutes, cool, and mix with the rest of the ingredients in a mixing bowl.
  2. Roll into tablespoon-sized balls and bake on a baking sheet at 375°F for 15-20 minutes.
