Swedish Tea Cakes

- 1/2 c powdered sugar
- 1 c butter
- 2 tsp vanilla
- 2 c all purpose flour
- 1 c finely ground almonds (or pecans)
- 1/4 tsp salt
DIRECTIONS
- These are light and quite sweet. Make them mouth-size bites as they can get crumbly.
- 1/2 c powdered sugar

- 1/4 tsp salt
- Oven at 325
- 1. Cream butter & sugar with vanilla until light & fluffy
- 2. Add flour, almonds and salt. Mix until dough holds together.
- 3. Shape into 1” balls & place on cookie sheet
- 4. Bake 15-20 min
- 5. Cool slightly, about 5 min. Roll in extra powdered sugar
- 6. Cool completely. Roll in more powdered sugar.
- Yields about 5 dozen balls
- Variations I've done:
- - Substitute almond extract for vanilla
- - Use a mix of cocoa and powdered sugar on outside when using pecans inside
- - Use rum extract when using pecans
