Swedish Tea Cakes

INGREDIENTS
  • 1/2 c powdered sugar
  • 1 c butter
  • 2 tsp vanilla
  • 2 c all purpose flour
  • 1 c finely ground almonds (or pecans)
  • 1/4 tsp salt
DIRECTIONS
  1. These are light and quite sweet. Make them mouth-size bites as they can get crumbly.
  2. 1/2 c powdered sugar
  3. 1 c butter
  4. 2 tsp vanilla
  5. 2 c all purpose flour
  6. 1 c finely ground almonds (or pecans)
  7. 1/4 tsp salt
  8. Oven at 325
  9. 1. Cream butter & sugar with vanilla until light & fluffy
  10. 2. Add flour, almonds and salt. Mix until dough holds together.
  11. 3. Shape into 1” balls & place on cookie sheet
  12. 4. Bake 15-20 min
  13. 5. Cool slightly, about 5 min. Roll in extra powdered sugar
  14. 6. Cool completely. Roll in more powdered sugar.
  15. Yields about 5 dozen balls
  16. Variations I've done:
  17. - Substitute almond extract for vanilla
  18. - Use a mix of cocoa and powdered sugar on outside when using pecans inside
  19. - Use rum extract when using pecans
