Sweet 'n' Nutty Popcorn
  • 1 1/4 cups sugar
  • 1/4 cup water
  • 1 1/2 tbsp. unsalted butter
  • 1/8 tsp. cinnamon
  • 6 cups popped popcorn
  • 2 cups wheat cereal squares
  • 1 cup salted cashews
  • 1 cup golden raisins
  1. 1. Combine sugar, butter, water and cinnamon in a large heavy pot (at least 5 1/2 qt.). Bring to boiling over medium heat, stirring constantly; continue to cook until the sugar is dissolved and the mixture becomes syrupy, 4 to 5 minutes. Remove pot from heat.
  2. 2. Add the popcorn, cereal, cashew and raisins to the pot; stir quickly to coat all ingredients evenly with the sugar mixture. Turn coated popcorn out in a single layer onto 1 or 2 large baking sheets lined with waxed paper. Break up any lumps with your hands. Let popcorn mixture cool for about 10 minutes.
