Sweet + Easy Cornbread

- 1 1/2 cups fine cornmeal
- 1 1/2 cups milk
- 1 1/2 cups flour
- 1 cup sugar
- 1 1/2 tsp salt
- 1 Tbsp + 2 1/4 tsp baking powder
- 2 eggs
- 3/4 cup vegetable oil
- 3/4 tsp vanilla
DIRECTIONS
- Preheat oven to 400 degrees F
- Mix corn meal and milk in a large bowl. Set aside
- Mix flour, sugar, salt and baking powder in a small bowl until blended
- Add eggs, oil and vanilla to the cornmeal mixture. Blend well. Add flour mixture and stir until well combined.
- Pour batter into a greased 12 x 12 baking pan. Bake for 30 minutes or until bread is springy and a knife inserted in the center comes out clean
