Sweet + Easy Cornbread
INGREDIENTS

  • 1 1/2 cups fine cornmeal
  • 1 1/2 cups milk
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 1/2 tsp salt
  • 1 Tbsp + 2 1/4 tsp baking powder
  • 2 eggs
  • 3/4 cup vegetable oil
  • 3/4 tsp vanilla
DIRECTIONS
  1. Preheat oven to 400 degrees F
  2. Mix corn meal and milk in a large bowl. Set aside
  3. Mix flour, sugar, salt and baking powder in a small bowl until blended
  4. Add eggs, oil and vanilla to the cornmeal mixture. Blend well. Add flour mixture and stir until well combined.
  5. Pour batter into a greased 12 x 12 baking pan. Bake for 30 minutes or until bread is springy and a knife inserted in the center comes out clean
