Sweet Chili Stir Fry

  • 2 boneless chicken breast chopped
  • 8 oz Fettuccini noodles
  • 2 tbsp sesame oil
  • 1/2 cup Thai sweet chili sauce
  • 3 tbsp soy sauce
  • 1 tsp crushed red pepper
  • 1/4 cup minced garlic
  • 1/4 cup minced cilantro
  • 1 white onion quarter chopped
  • 1 small red pepper thinly sliced
  • 1 bunch green onions finely chopped
  • 1 head broccoli chopped
  • 1 cup chopped mushrooms
  1. In a medium pan bring water to a bowl and add Fettuccini noodles. Bowl for 10 minutes or until noodles are al dente. Set aside in a bowl of cold water for later.
  2. Bring a wok Or a large non stick frying pan to high heat, add sesame oil, garlic, white onions and crushed red pepper. Saute for 3 minutes or until onions begin to soften. Then add chicken and soy sauce. Saute for another 8 minutes.
  3. Then add mushrooms, peppers, broccoli and chili sauce. Saute for another 5 minutes or until sauce thickens.
  4. After sauce thickens add noodles and cilantro and saute for another 2 minutes and then set aside to cool for 2 minutes and then serve.
