Sweet Cornbread Muffins

  • 1 Cup yellow cornmeal
  • 1/2 Cup all-purpose flour
  • 1/2 Cup whole wheat flour
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 1 Cup milk
  • 2 large eggs
  • 1/4 Cup butter or margarine, melted (we forgot to melt it and it worked fine)
  • 1/4 Cup Honey
DIRECTIONS
  1. 1. Preheat oven to 375F (190C)
  2. 2. Line muffin tin with paper liners
  3. 3. In a large bowl, mix the dry ingredients (cornmeal, flours, baking powder, and salt)
  4. 4. In a medium bowl, whisk together the wet ingredients (milk, eggs, butter and honey)
  5. 5. Add the wet ingredients to the dry ingredients and stir until just mixed
  6. 6. Evenly divide the mixture into the lined muffin tin, about 3/4 full
  7. 7. Bake for 15 mins or until golden
