Sweet Potato/Yam Gratin

- cooking spray or butter for pan
- 2 cups heavy cream
- 1 teaspoon salt
- 3 pounds sweet potatoes/yams (peeled)
- 1/2 cup shredded Gruyere cheese
DIRECTIONS
- Preheat oven to 350 and spray or butter a 9x9 inch ceramic baking dish. Place baking dish on baking sheet.
- Stir together heavy cream and salt in a large bowl.
- Slice sweet potatoes thinly with a mandoline and add slices to bowl with heavy cream. Make sure slices are coated with cream mixture.
- Layer 1/3 of sweet potatoes in the pan. Sprinkle with half of cheese. Repeat with another 1/3 of yams and remainder of cheese. Top with remaining yams. Pour any remaining cream mixture over top.
- Bake, uncovered, on center rack of oven 30 min. Remove from oven.
- Press fork or spatula carefully against top layer to allow liquid to flow over top. Return pan to oven; bake 30 min. Remove pan; press top layer to allow liquid to flow over top. Return pan to oven; bake 30-40 min or until yams are tender. Remove from oven; let rest 15 min.
