Sweet Potato Banana Bread

  • 1 large sweet potato, boiled or roasted and mashed
  • 2 very ripe bananas, mashed
  • 1¼ c. golden brown sugar
  • ¾ c. olive oil
  • 3 eggs, lightly beaten
  • 2¼ c. flour
  • 1½ t. baking soda
  • 1½ t. cinnamon
  • 1 t. nutmeg
  • ½ t. allspice
  • Pinch of salt
  1. Preheat oven to 350 F/175 C and prepare two loaf pans.
  2. Combine the wet ingredients in a large mixing bowl.
  3. Combine dry ingredients in a medium mixing bowl and whisk to mix. Fold dry ingredients into the wet ingredients and pour into prepared pans.
  4. Bake for 45 minutes or until a toothpick inserted into the center of each loaf comes out clean.
This recipe was born out of the desire for wintertime after work snack and a limited stock in my pantry. I always have overripe bananas in my freezer, though, so banana bread is an easy option. This particular evening, I just so happened to have a rather tired looking sweet potato on hand, and I thoroughly believe in the "waste not, want not" principle.
