Sweet Potato Breakfast bar
INGREDIENTS
- Cooking Time: 30-35
- 5 sweet potatoes
- 1/2 cup sugar
- 2 tablespoons cinnamon
- 2 tablespoons extra-light olive oil or canola oil
- 2/3 cup maple syrup
- 3/4 cup orange juice
- 4 cups quick-cooking oats
DIRECTIONS
- Wash and scrub sweet potatoes.
- Pierce them with a fork, and microwave on high until they're soft, about 8 minutes.
- While the sweet potatoes are cooking, heat your oven to 400 degree F.
- Cut the potatoes lengthwise, scoop out the flesh, and place in a large bowl.
- Add sugar, cinnamon, oil, maple syrup, and orange juice.
- Stir in oats and mix well.
- Lightly grease a 9 x 13-inch baking pan.
- Pour mixture evenly into pan.
- Bake 23 minutes.
- Let cool 10 minutes.
- Cut into squares.
- Serve immediately or store for three days in an airtight container.
