Sweet Potato Breakfast bar

  • 5 sweet potatoes
  • 1/2 cup sugar
  • 2 tablespoons cinnamon
  • 2 tablespoons extra-light olive oil or canola oil
  • 2/3 cup maple syrup
  • 3/4 cup orange juice
  • 4 cups quick-cooking oats
  1. Wash and scrub sweet potatoes.
  2. Pierce them with a fork, and microwave on high until they're soft, about 8 minutes.
  3. While the sweet potatoes are cooking, heat your oven to 400 degree F.
  4. Cut the potatoes lengthwise, scoop out the flesh, and place in a large bowl.
  5. Add sugar, cinnamon, oil, maple syrup, and orange juice.
  6. Stir in oats and mix well.
  7. Lightly grease a 9 x 13-inch baking pan.
  8. Pour mixture evenly into pan.
  9. Bake 23 minutes.
  10. Let cool 10 minutes.
  11. Cut into squares.
  12. Serve immediately or store for three days in an airtight container.
