Sweet Potato Casserole

  • 4 1/2 cups Baby Red Potatoes, Cooked & Mashed
  • 1/2 cup Butter, Melted
  • 1/3 cup Milk
  • 1 cup Sugar
  • 1/2 tsp Vanilla
  • 2 Eggs, Beaten
  • 1 cup Brown Sugar
  • 1/2 cup Flour
  • 1/3 cup Butter
  • 1 cup Chopped Pecans (optional)
DIRECTIONS
  1. Oven Temperature: 350°F
  2. *Preheat oven to 350; grease baking dish; In large bowl, mix together potatoes, 1/2 cup butter, milk, sugar, vanilla, and eggs
  3. *Spread sweet potato mixture into the prepared baking dish
  4. *In a small bowl, mix together brown sugar and flour; cut in 1/3 cup butter until mixture is crumbly (then pour pecans, if you are using them)
  5. *Spread topping over potatoes
  6. *Bake 24 minutes, or until golden brown
