Sweet Potato Casserole

  • 6 large sweet potatoes- peeled & chopped
  • 1 cup walnuts
  • 1/2 cup full fat coconut milk
  • 1 tablespoon cocoa powder
  • 1 tablespoon vanilla extract
  • 3 drops Cinnamon Bark Vitality Essential Oil
  • 2 tablespoons olive oil
DIRECTIONS
  1. Preheat oven to 350F
  2. Boil potatoes for 20-25 minutes- until soft
  3. Drain water out & return sweet potatoes to pot
  4. Add 1 tablespoon of olive oil, the coconut milk & vanilla extract, and sprinkle in some salt.
  5. With a hand mixer mash everything together until it's smooth
  6. Transfer all into a casserole
  7. In a small bowl mix the chopped walnuts with 1 tablespoon of olive oil, cacao powder, and cinnamon bark oil.
  8. Sprinkle on top of the sweet potatoes
  9. Cook for 20 minutes
