Sweet Potato Frys and Garlic Aioli

  • Sweet Potato Frys
  • 5 medium potatoes
  • 1 sweet potato
  • olive oil
  • fresh rosemary, chopped
  • salt and pepper
  • Garlic Aioli
  • 2 small garlic cloves, minced
  • juice of half a lemon
  • 2 Tablespoons chopped Italian parsley
  • 1/2 cup mayonnaise (You can make homemade mayonnaise. I did not).

  1. Sweet Potato Frys
  2. Preheat the oven to 425 degrees.
  3. Wash the potatoes and cut into fours length-wise so they look like big fat french fries. Toss in a bowl with the olive oil and rosemary. Spread on the baking sheet and season liberally with salt and pepper. Cook for one hour, flipping the potatoes with a spatula every twenty minutes or so.
  4. Garlic Aioli
  5. Mix everything up in a little bowl. Serve with fries.
