Sweet Potato Mocha Nut Bread

INGREDIENTS
- 1/2 c. soft butter
- 1 1/2 c. sugar
- 1/2 cup brown sugar
- 3 c. flour
- 1/2 pecan meal
- 2 c. cold mashed sweet potatoes
- 2 tsp. baking soda
- 2/3 c. cold, strong black coffee
- 1/2 c. shortening
- 4 eggs
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 1/2 tsp. nutmeg
DIRECTIONS
- Cream shortening and sugar until light.
- Add eggs, one at a time, mixing well after each addition.
- Blend in sweet potatoes.
- Sift together dry ingredients.
- Stir into creamed mixture alternately with cold coffee.
- Pour batter into 2 greased 9 x 5 loaf pans.
- Bake at 375 degrees for 1 hour or until they test done in the center.
- Cool 10 minutes.
- Remove from pans and cool completely.
