Sweet Potato Mocha Nut Bread

INGREDIENTS
  • 1/2 c. soft butter
  • 1 1/2 c. sugar
  • 1/2 cup brown sugar
  • 3 c. flour
  • 1/2 pecan meal
  • 2 c. cold mashed sweet potatoes
  • 2 tsp. baking soda
  • 2/3 c. cold, strong black coffee
  • 1/2 c. shortening
  • 4 eggs
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 1/2 tsp. nutmeg
DIRECTIONS
  1. Cream shortening and sugar until light.
  2. Add eggs, one at a time, mixing well after each addition.
  3. Blend in sweet potatoes.
  4. Sift together dry ingredients.
  5. Stir into creamed mixture alternately with cold coffee.
  6. Pour batter into 2 greased 9 x 5 loaf pans.
  7. Bake at 375 degrees for 1 hour or until they test done in the center.
  8. Cool 10 minutes.
  9. Remove from pans and cool completely.
