Sweet Potato Palak
INGREDIENTS

- Preparation Time: 15 minutes
- 1 onion, diced
- 4 medium sweet potatoes, cut into bite size pieces
- large bunch of spinach
- 12 tomatoes
- 4 cloves garlic
- 1.5 inch piece of ginger
- 2 Tbsp garam masala
- 2 cups coconut milk
- 1/4 cup water
- salt to taste
- pepper to taste
DIRECTIONS
- Heat oil in a pan over medium heat. One hot, add the onion, cooking until it is translucent.
- Add the sweet potato and cook, covered, for about ten minutes or until the sweet potato is soft.
- While it is cooking, in a blender combine the spinach, tomatoes, garlic, ginger, garam masala, coconut and water. Blend until well incorporated.
- Add the blended mix to the onions and sweet potato. Bring to a simmer and cook, covered, for approximately 30 minutes.
- Feel free to add more spinach to the mix for the last few minutes so that it wilts but is not over-cooked.
