Sweet Potato Souffle
  • 4 cups mashed sweet potatoes
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1/2 tsp. salt
  • 1/3 stick butter or margarine (melted)
  • 1 tsp. vanilla
  • Mix well
  • Pour into buttered pan
  • Topping:
  • 1 cup brown sugar
  • 1/2 cup flour
  • 1/3 cup butter or margarine (melted)
  • 1 cup pecans
  1. Mix first list of ingredients well
  2. Pour into buttered pan
  3. Topping: Crumble topping evenly over potato mixture. Bake at 350F for 35-45 minutes uncovered.

This recipe is "The Bomb" It's very easy. I always make extra, cause when everyone else is eating cake, and pies for days and days..My sweet Holiday food of choice is Sweet Potato Souffle!
