Sweet Potato Waffles

  • 1 c. milk
  • 2 egg whites
  • 2 tsp. canola oil
  • 3/4 c. flour
  • 1/4 c. pecan meal
  • 2 tsp. baking powder
DIRECTIONS
  1. Place the sweet potatoes, milk, egg whites and oil in the bowl of a food processor.
  2. Process until blended.
  3. Add the flour, pecan meal, and baking powder. Process until smooth.
  4. Preheat a waffle iron according to the manufacturer's directions.
  5. Coat the grids with nonstick spray.
  6. Add 3/4 cup of the batter.
  7. Cook for approximately 8 minutes, or until they are cooked through.
