Sweet Potato with Nut Topping
INGREDIENTS
  • Cooking Time: 20 minutes
  • Servings: 4-6
  • Preparation Time: 10 minutes
  • 2 large sweet potatoes
  • 2 Tbsp orange juice or pineapple juice (if not using juice, add 1 Tbsp honey or agave)
  • 1/4 tsp vanilla extract
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • Pinch of salt
  • Optional Sweetened Nut Topping:
  • 1 Tbsp brown sugar
  • 1 Tbsp unsalted butter
  • 2 Tbsp chopped walnuts or pecans
DIRECTIONS
  1. Microwave 2 large sweet potatoes for 7 - 10 minutes. (Times vary depending on the microwave.) Can also peel, dice and boil them for 20 minutes, but will not be able to re-use the sweet potato shell.
  2. Let cool and cut in half. Scoop out the inside with a spoon, leaving whole shell. Combine the sweet potato with all other ingredients in a medium bowl and mix well.
  3. Place back into the potato skins or in a serving dish to serve. If desired mix Sweetened Nut Topping ingredients and spoon on top of sweet potato mixture. Place in microwave, covered, for 30 seconds to heat.
  4. Note: this dish can be made ahead and refrigerated. To reheat, microwave for 1-2 minutes and stir before adding nut topping. Test heat and add 30 seconds at a time until heated through. Then heat 30 seconds more and serve.
RECIPE BACKSTORY
Sweet potatoes with juice are very sweet indeed. Between the sweetness and spices, with the rich nut topping, the lack of added calories is not missed in this simply healthy recipe.
