Sweet Potato with Nut Topping

- 2 large sweet potatoes
- 2 Tbsp orange juice or pineapple juice (if not using juice, add 1 Tbsp honey or agave)
- 1/4 tsp vanilla extract
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- Pinch of salt
- Optional Sweetened Nut Topping:
- 1 Tbsp brown sugar
- 1 Tbsp unsalted butter
- 2 Tbsp chopped walnuts or pecans
DIRECTIONS
- Microwave 2 large sweet potatoes for 7 - 10 minutes. (Times vary depending on the microwave.) Can also peel, dice and boil them for 20 minutes, but will not be able to re-use the sweet potato shell.
- Let cool and cut in half. Scoop out the inside with a spoon, leaving whole shell. Combine the sweet potato with all other ingredients in a medium bowl and mix well.
- Place back into the potato skins or in a serving dish to serve. If desired mix Sweetened Nut Topping ingredients and spoon on top of sweet potato mixture. Place in microwave, covered, for 30 seconds to heat.
- Note: this dish can be made ahead and refrigerated. To reheat, microwave for 1-2 minutes and stir before adding nut topping. Test heat and add 30 seconds at a time until heated through. Then heat 30 seconds more and serve.
