Sweet and Nutty Snack Mix

INGREDIENTS
  • 4-1/2 cups party mix
  • OR 4-1/2 cups crispy multi-grain cereal
  • 2 tablespoons Butter Shortening
  • 1/2 cup chocolate chips
  • 1/4 cup Creamy Peanut Butter
  • 1/2 teaspoon vanilla extract
  • 3/4 cup confectioners' sugar
DIRECTIONS
  1. Measure party mix or cereal into a large mixing bowl.
  3. In a microwave safe bowl melt shortening, chocolate chips and peanut butter on 50% power, checking at 1 minute intervals.
  5. Remove mixture from microwave and stir in vanilla extract.
  7. Pour over cereal and mix until well coated. Place confectioners sugar in a resealable plastic bag; add coated cereal and toss to coat well.
  9. Spread double-coated cereal onto sheet of wax paper to cool. Pick up coated cereal with hands and store in an airtight container. Discard excess sugar.
