Sweet and Sour Green Beans
  • 2 lbs fresh green beans or 2 pkg frozen
  • 2 tsp salt
  • 3 cups water
  • 3 Tbls shortening
  • 2 Tbls flour
  • 3 Tbls sugar
  • 3 Tbls vinegar
  1. Cut fresh beans in half. Add to salted water and bring to a boil. Cook over medium heat for 10 minutes. Drain, reserving 1-1/2 cups of the stock. Melt shortening in sauce pan. Add the flour, stirring until smooth. Add the reserved stock, stirring constantly until it reaches the boiling point. Add sugar, vinegar and the beans. Cover and cook on low for 15 minutes. Add salt and pepper as needed.
