Sweet and Sour Pork

INGREDIENTS
- 1 can (20 oz.) pineapple chunks
- 1/2 cup water
- 3 Tblsp. soy sauce
- 1 1/2 Tblsp. cornstarch
- 1 Tblsp. vinegar
- 1/4 tsp. hot pepper flakes
- 1 lb. boneless pork
- 3 Tblsp. olive oil
- 2 large cloves garlic, thinly sliced
- 1 tsp. ground ginger
- 1 large onion, sliced
- 1 pepper julienned
- 2 cups snow peas, strings removed
DIRECTIONS
- Drain pineapple, reserving 4 Tblsp. juice. Mix reserved juice, water, soy sauce, cornstarch, vinegar, and pepper flakes; set aside.
- Prepare the pepper, garlic, onion, and snow peas. Set aside.
- Cut pork in strips. In large skillet or Dutch oven, brown pork in hot oil. Remove the meat and set aside.
- Add the garlic, onions, and pepper to the skillet and sauté for a minute or so.
- Stir up the sauce and add to the vegetables; bring to a boil. Add the meat back in along with the pineapple chunks and snow peas. Heat through.
- Serve over rice if desired.
